FURUSAWA DISTILLERY「Mahoko」Aged Sweet Potato Shochu
This potato shochu is handmade using rice koji (white koji) for the primary fermentation and steamed Koganesengan potatoes for the secondary fermentation. It is distilled once in a normal pressure still which enhances the aroma and is optimally aged.
The aging period is over 16 years, and two types of containers are used: ceramic jars and enamel tanks.
Aging in ceramic gives the shochu a rich, umami-filled taste.
